Ground Beef Club Sandwich

  • 10 slices of bacon, 2 slices coarsely chopped

  • 2 garlic cloves

  • 3 tablespoons dry bread crumbs

  • 3 tablespoons freshly grated Parmesan cheese

  • 3 tablespoons milk

  • 1 large egg

  • 1/2 teaspoon thyme

  • 1/4 teaspoon finely chopped rosemary

  • 1/2 teaspoon hot sauce

  • Salt and freshly ground pepper

  • 3/4 pound lean ground sirloin/mince

  • 12 slices white or sourdough bread

  • 2 tablespoons extra-virgin olive oil

  • 1/4 cup mayonnaise

  • 1 chipotle chilli, stemmed and chopped

  • 2 beefsteak tomatoes, thinly sliced

  • 4 romaine lettuce leaves

  • Cornichons and mustard, for serving

Skirt Steak with Moroccan Spice Rub and Yogurt Sauce

  • 600g skirt steak, cut into 6-inch lengths

  • 3 tablespoons plus 1 1/2 teaspoons Moroccan Spice Rub

  • 3/4 cup plain whole-milk yogurt

  • 2 scallions, thinly sliced

  • 1 garlic clove, smashed

  • 1 tablespoon chopped pickled jalapeños

  • 1 tablespoon extra-virgin olive oil, plus more for brushing

  • Salt and freshly ground pepper

  • 4 large pita breads, for serving

  • Romaine lettuce leaves, for serving

Beef Bulgogi Stir-Fry

  • 4cm/1 ½ in piece of ginger

  • 4 tablespoons soy sauce

  • 4 tablespoons mirin

  • 3 garlic cloves

  • 2 tablespoons chopped pineapple

  • 2 tablespoons red chilli flakes or Korean chilli powder

  • 3 tablespoons golden caster sugar

  • 3 tablespoons sesame oil

  • 500g sirloin or rump steak, trimmed of fat and sliced

  • 1 large onion, cut into half moons

  • 1 tablespoon of toasted sesame seeds

  • 200g cooked basmati rice

  • chopped spring onions, to serve
