Satay Sweet Potato Curry

  • 1 tablespoon of coconut oil

  • 1 onion, chopped

  • 2 garlic cloves, grated

  • thumb-sized piece ginger, grated

  • 3 tablespoons of Thai red curry paste (check the label to make sure it’s vegetarian/ vegan)

  • 1 tablespoon of smooth peanut butter

  • 500g sweet potato, peeled and cut into chunks

  • 400ml can coconut milk

  • 200g bag spinach

  • 1 lime, juiced

  • cooked rice, to serve

  • dry roasted peanuts to serve 

Chickpea Curry Jacket Potatoes

  • 4 sweet potatoes

  • 1 tablespoon coconut oil

  • 1 ½ teaspoon cumin seeds

  • 1 large onion, diced

  • 2 garlic cloves, crushed

  • thumb-sized piece ginger, finely grated

  • 1 green chilli, finely chopped

  • 1 teaspoon garam masala

  • 1 teaspoon ground coriander

  • ½ teaspoon turmeric

  • 2 tablespoon tikka masala paste

  • 2 x 400g can chopped tomatoes

  • 2 x 400g can chickpeas, drained

  • lemon wedges and coriander leaves, to serve
